    Tomato confit is going to be your new favorite tomato dish! Use tomato confit in your favorite pasta, soups, salads, sandwiches, or to top your toast. This delicious tomato side dish can be your best-kept secret or your most shared recipe amongst your friends and family.

    Tomato confit is a delicious combination of cherry tomatoes, oils, and herbs that truly enhance any dish. The word confit may sound fancy and overwhelming but trust me - making homemade tomato confit is super easy. Let's get to it! 

    What Is Tomato Confit?

    The word confit (pronounced kon-FEE) is a term used in the cooking world that means "a garnish made usually from fruit or vegetables that are cooked until tender in a seasoned liquid". To make tomato confit you mix cherry tomatoes with extra virgin olive oil, garlic, thyme, salt, a little bit of sugar, and balsamic vinegar. You then cook them at a low temperature in your oven for about an hour and a half to achieve a deliciously flavorful tomato dish. 

    Ingredients Needed

    • 1 ½ lb cherry tomatoes (you can use different colors if you want)
    • 3-5 garlic cloves 
    • 6 sprigs of fresh thyme
    • 2 cups extra virgin olive oil 
    • ¼ teaspoon salt 
    • 1 teaspoon granulated sugar
    • 1 ½ teaspoon balsamic vinegar

    How to Make Tomato Confit

    Step 1: Preheat the oven to 260 degrees Fahrenheit. 

    Step 2: Place the tomatoes, garlic, and fresh thyme in a single layer in a 9x13 glass baking dish.

    Step 3: Pour in enough olive oil so that the tomatoes are covered about halfway. 

    Step 4: Sprinkle the tomatoes with salt and sugar, then drizzle the balsamic vinegar over everything. 

    Step 5: Add the tomato dish into the oven and bake for about 1 ½ - 2 hours, until the tomatoes are wrinkled but haven’t yet burst.

    Step 6: Remove tomatoes from the oven and allow them to slightly cool. Serve with crusty bread, crackers, vegetables, oatmeal, etc. Enjoy!

    Serving Suggestions

    Tomato confit can be served on a beautiful charcuterie board with crackers, cheese, grapes, meats, etc. It can also be added to your favorite pasta or soup, salad, or sandwich.

    How to Store and Reheat

    Before you store your tomato confit make sure you cool it to room temperature. Then, store in an airtight container in the refrigerator for up to 7 days. You can also freeze this tomato dish in an airtight container for up to 6 months. 

    To reheat your refrigerated tomato confit you can either put them in the microwave in a microwave-safe covered dish or,  preheat your oven to 300 degrees Fahrenheit and heat them for 5 minutes.

    Expert Tip

    You can reserve the oil for use in other dishes. Make sure to use it within a week!
