Oftentimes, everyone in our house wants cookies, but we don't want to turn on the oven because of the heat. So, we make these easy no-bake cookies with chocolate chips and peanut butter. A LOT. The best part is the kids can practically make them start to finish, and it takes under 10 minutes!

I like to make my no-bake cookies into bars, as you can see. I always chill them in the freezer, and pouring them into a 8x8 square glass dish is easy for storing and cutting.
My boys were so cute as they were making these the other day. They kept taking turns, each one excitedly pouring in their chosen ingredient. I hope they always remember those small moments of sniffing the vanilla and going, "Mmmmm!" Or licking the gooey dough off the spoon. It's those simple shared experiences that make the largest impact.
Helpful tips for making no-bake cookies:
- Make sure to slowly heat the chocolate chip mixture. If they are cooked too quickly, they will burn and harden the chocolate.
- Too much oatmeal can cause these to not set up as easily, if making them into drop cookies.
- Chilling them in the refrigerator for 15-20 minutes will help them set up faster, and they are tasty when cool.

Easy No-Bake Cookies with Chocolate Chips and Peanut Butter
Ingredients
- 1 cup semi-sweet chocolate chips
- 1 stick butter
- ⅓ cup milk
- ¾ cup sugar
- 1 cup peanut butter
- 2 cups oats
- 1 teaspoon vanilla extract
Instructions
- Pour chocolate chips, butter, milk, and sugar in a large saucepan. Heat on medium heat until combined, stirring constantly. Bring to a boil, then remove from heat.
- Stir in peanut butter, oats, and vanilla. Mix well.
- Pour mixture into a parchment lined 8x8 square glass dish, or use a spoon to make drop cookies. Let set for 30 minutes until firm. (You can chill in fridge to set it up more quickly.) Enjoy!
