These healthy strawberry popsicles contain only four ingredients and they are incredibly easy to make. (And they are vegan, paleo, and gluten-free!) The prep time takes only 5 minutes, and it's also a recipe that kids love making! Gather together to enjoy these strawberry popsicles on a hot summer day.
What you need to make these healthy strawberry popsicles
- Blender - I use and recommend a Vitamix to get everything smooth
- Strawberries
- Coconut water
- Fresh lemon juice
- Coconut sugar
- Popsicle molds and sticks
Step by step instructions on how to make strawberry popsicles
Step 1: Add the strawberries, coconut water, lemon juice, and coconut sugar to your blender. Blend on high for 30-60 seconds until pureed.
Step 2: Pour the strawberry puree into the popsicle mold, making sure to leave about ¼ inch room for popsicle sticks. Place the mold lid on, and gently place the sticks into the center. (I let my kids do this part.)
Step 3: Place in freezer for a minimum of 6 hours.
Helpful tips for making popsicles
- To keep the popsicle sticks from floating around in the molds, soak them in warm water for 5–10 minutes before inserting. Then, place the lid on the mold and insert the sticks, making sure they are straight and even.
- When they are firm and ready to be removed, run the bottom of the mold under warm water for about 20–30 seconds. Gently grip the handles and pull upward to get a clean popsicle.
- Feel free to add in additional flavors and mix-ins, like mint or other juices.
