I'm a huge fan of roasted vegetables and roasted cherry tomatoes are no exception. Roasted cherry tomatoes are simply cherry tomatoes cut in half, tossed in olive oil and minced garlic, and sprinkled with salt, pepper, and onion powder. You can eat roasted cherry tomatoes on their own or add them to literally any of your favorite savory dishes!
Ingredients Needed
- 1 lb cherry tomatoes, cut in half
- 2 tablespoon extra virgin olive oil
- ½ teaspoon fine sea salt
- ¼ teaspoon black pepper
- ¼ teaspoon onion powder
- 2 teaspoon minced garlic
How to Make Roasted Cherry Tomatoes
Step 1: Preheat your oven to 400 degrees Fahrenheit.
Step 2: Cut the cherry tomatoes in half.
Step 3: Add the cherry tomatoes to a baking sheet. Drizzle with olive oil and then sprinkle with sea salt, black pepper, onion powder, and minced garlic. Stir the tomatoes to coat them evenly in the oil and spices.
Step 4: Put the cookie sheet in the oven and bake for 20 minutes or until softened and sweet.
Step 5: Serve with pasta, protein, or other vegetables. Enjoy!
Recipe Variations
The great thing about roasting vegetables is that there are a variety of ways to do so.
- You can use grape tomatoes if you like those better than cherry tomatoes.
- You can also use vegetable oil, coconut oil, or avocado oil as an alternative to olive oil.
- Omitting or adding different spices is also an option. If you want your cherry tomatoes to have a spicy kick try using paprika, red pepper flakes, or chili powder.
- Putting fresh basil on your roasted cherry tomatoes is also delicious - top your cherry tomatoes with fresh basil leaves (cut into little pieces) before putting them in the oven.
- Any other herbs you enjoy can be added to this recipe.

Should I peel the tomatoes before cooking them?
- No - you do not need to peel your tomatoes before cooking them. The skin of the tomato will soften while they cook and will pull off easily once they're cooled if you do not want the skin attached.
Do I need to slice the tomatoes?
- You can leave your tomatoes whole if you don't have time to halve them or if you simply don't want to halve them. Most of time small tomatoes burst open in the oven while cooking so slicing them helps avoid that.
