Roasted Cherry Tomatoes

I'm a huge fan of roasted vegetables and roasted cherry tomatoes are no exception. Roasted cherry tomatoes are simply cherry tomatoes cut in half, tossed in olive oil and minced garlic, and sprinkled with salt, pepper, and onion powder. You can eat roasted cherry tomatoes on their own or add them to literally any of your favorite savory dishes!

Ingredients

  • 1 lb cherry tomatoes (cut in half)
  • 2 tablespoon extra virgin olive oil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder
  • 2 teaspoon minced garlic

Instructions

  • Preheat your oven to 400 degrees Fahrenheit.
  • Cut cherry tomatoes in half.
  • Add the cherry tomatoes to a baking sheet. Drizzle with olive oil and then sprinkle with sea salt, black pepper, onion powder, and minced garlic. Stir the tomatoes to coat them evenly in the oil and spices.
  • Put the cookie sheet in the oven and bake for 20 minutes or until softened and sweet.
  • Serve with pasta, protein, or other vegetables. Enjoy!
