This tasty and beautifully colorful carrot raisin salad is perfect to make any time you're asked to bring a salad to a get-together or party and have no idea what to make! It's so easy to throw together (under 20 minutes) and can be stored in the fridge for up to 5 days - becoming more and more delicious as each day passes.
Ingredients Needed
- 4 cups Shredded Carrots (about 1 lb of large carrots)
- ½ cup Raisins
- ¼ cup Golden Raisins
- ¾ cup Mayonnaise
- 1 tablespoon Sugar
- 1 tablespoon Lemon Juice
How to Make Carrot Raisin Salad
Step 1: Peel the carrots and cut the tops off of them. Shred by hand using the large setting on a cheese grater or use the shredding disk on a food processor to shred the carrots.
Step 2: In a large bowl, combine the shredded carrots and both kinds of raisins. Mix to combine.
Step 3: In a small bowl, whisk the mayonnaise, sugar, and lemon juice together until well combined.
Step 4: Pour the mayonnaise dressing over the carrots and raisins. Use a spoon to mix until fully coated.
Step 5: Serve and enjoy!
Recipe Tips
- I recommend shredding your carrots on a cheese grater rather than using already cut matchstick carrots from a bag. This is more traditional and they will soak up the dressing better this way.
- Add pineapple tidbits for extra sweetness if desired.

Store your carrot raisin salad in an airtight container in the refrigerator for 4 - 5 days. The longer your salad sits the more flavorful it will become!
