    Vegan Caesar Salad Dressing

    A crisp caesar salad is one of my favorite salads. I love them so much that I had to create my own vegan caesar salad dressing recipe. This vegan caesar dressing recipe can be made in 25 minutes, is thick and creamy, calls for no eggs, and has none of the high amounts of sodium, sugar, unnatural additives, and unhealthy fats that most dressings have.

    Ditch your store-bought salad dressing and make this creamy salad dressing to top your next caesar salad.

    Best Vegan Caesar Dressing Recipe Ingredients

    ½ cup raw cashews 

    1 tablespoon dijon mustard

    1 teaspoon lemon juice  

    ½ teaspoon minced garlic

    ½ tablespoon nutritional yeast 

    2 tablespoon avocado oil 

    ½ teaspoon white wine vinegar 

    ¼ teaspoon table salt

    ⅛ teaspoon black pepper

    1 tablespoon capers 

    Step by Step Instructions

    Step 1: In a small pot, bring about 3 cups of water to a boil.

    Step 2: Once boiling, add the cashews into a heat-resistant bowl (glass or ceramic are good options). Pour in enough of the boiling water to cover the cashews. Allow the cashews to soak in the water for 10 minutes.

    Step 3: Drain the water from the cashews, reserving the water.

    Step 4: Add all of the cashews and the rest of the ingredients into a food processor along with ½ cup of the reserved cashew water. Blend on high until completely smooth. Enjoy with a plant-based caesar salad!

    Storage Instructions

    • The dressing will thicken as it cools in the refrigerator. If you want to enjoy leftovers, whisk some water into the dressing until it thins out. 

    Expert Tips and Tricks

    • This vegan caesar salad dressing will thicken as it blends. Your dressing is not ready yet if it is still chunky or watery. Continue blending until it is smooth and thicker, as shown in the video. 
    • My food processor took about 3 minutes of blending in order to get the dressing completely smooth. Your time will depend on the power of your blender/food processor. 
    • If you want a tangier flavor, you can also add some of the caper brine
    • Fresh squeezed lemon juice is best but bottled will work in a pinch.
    • Vegan caesar dressing will stay good in the fridge for up to 5 days if stored in an airtight container.
