Living on the east coast is what seasonal dreams are made of, and my pumpkin patch dreams DEFINITELY came true last weekend. I made some ridiculously yummy no-bake pumpkin chocolate chip energy bites to go along with our picnic lunch in the countryside.
What goes best with no-bake pumpkin chocolate chip energy bites?
Pumpkin patches! Duh! I couldn't resist sharing photos of this pastoral family-owned pumpkin patch, so don't mind me while I indulge myself in documenting. There is just something so romantic and cozy about pumpkin patches! It gives me the same feeling as gathering around a large dinner table with candles lit, enjoying a warm, comforting meal with loved ones.
Ummm, Abbey I believe the word you are looking for is "hygge."

So, this pumpkin patch! HEIRLOOM PUMPKINS YOU CUT FROM THE VINE YOURSELF! Living on the west coast my entire life, this is only something you see in fairy tales. Like Cinderella. And her pumpkin freaking turned into a carriage. So you can imagine my excitement at being here! (Below, see the creature in her natural habitat, channeling her inner Cinderella.)
Then there was the Pumpkin Spice Nog!
After we all searched and tromped our way through the patch with our perfect jack-o-lantern pumpkins, we took a little break and enjoyed some of those no-bake pumpkin chocolate chip energy bites, along with some Good Karma plant-based Pumpkin Spice Nog. No-Bake Pumpkin Chocolate Chip Energy Bites
Ingredients
- 1 cup oats
- ½ cup flaxseed meal
- ⅓ cup pumpkin puree
- ⅓ cup pure maple syrup
- ½ teaspoon ground cinnamon
- ⅛ teaspoon nutmeg
- ⅛ teaspoon ground cloves
- ⅛ teaspoon ground cardamom
- ¼ teaspoon salt
- ½ cup semi-sweet chocolate chips dairy-free
Instructions
- Pour all of the ingredients, except the chocolate chips, into the bowl of a food processor.
- Pulse multiple times until ingredients are thoroughly mixed together. Scrape down sides with a spatula as needed and mix. Pour dough into a bowl, and mix in chocolate chips.
- Form into round 1 ½ inch balls. Place in an airtight container and freeze or refrigerate. Serve chilled and keep them on hand for a tasty snack or dessert. Enjoy!
