How to Make Gluten-Free Crust for No-Bake Mini Cheesecakes
You ready for this mind-blowingly awesome no-bake dessert hack? Okay, here it goes . . .
Gluten-free protein energy balls! Yep. So simple, right? I used the Bounce Vanilla Almond Protein Energy Balls because they have a sweet flavor—perfect for cheesecake crust. All you do is mold them into a mini cheesecake pan. (I recommend getting this pan because it's non-stick and the bottoms easily pop out for clean cheesecakes!) I love the convenience of this crust, because pulling out the food processor feels too fussy sometimes.
Also, I have to tell you a story about ordering these energy bites on Amazon! I thought I had the flavors I needed when I went to make these no-bake mini cheesecakes the other day. But, upon digging through my pantry, I realized we had eaten every last ball! In a panic, I clicked open my Amazon app and looked to see if they were available. Simple 4-Ingredient No-Bake Mini Cheesecakes (Gluten-Free)
Ingredients
- 4 Vanilla Almond Bounce Energy Balls
- 2 cups cream cheese
- ½ cup pure maple syrup
- 2-3 tablespoons fresh lemon juice
- Fresh strawberries and blueberries
Instructions
- Divide each ball into thirds. Mold each piece into the well of a mini cheesecake tin until flat and even.
- Mix together cream cheese, maple syrup, and lemon juice with an electric mixer until smooth. Spoon 1-2 tablespoons in each tin. Chill in freezer for 2 hours.
- Remove mini cheesecakes from freezer. Let sit about 5 minutes to thaw to release from tin. Add fresh strawberries and blueberries to each cheesecake and serve immediately. Enjoy!
