    Easy Apple Spice Cake with Chocolate Chips (Dairy-Free + No Refined Sugar!)

    You're going to want to give me a huge hug after you make this easy apple spice cake with chocolate chips. Not only is it the ultimate fall comfort treat, but it does not contain ANY refined sugars or dairy! Meaning it's totally healthy(ish) and the perfect cake in which you can indulge on a brisk evening after a savory dinner.

    The Best and Most Easy Apple Spice Cake with Chocolate Chips

    I realize there are hundreds of apple spice cake recipes out there, but this one is the best. You know why? Because it is stupidly moist! And there is no refined sugar! Huzzah!

    The secret ingredient for making this cake is peanut butter. Yes, I take any opportunity to connect my love of chocolate (I use these vegan chocolate chips, by the way) and peanut butter when physically possible. Add in the festive apple spice flavor of the season, and we've hit the ultimate fall food trio!

    The Right Pan is Key!

    Not all pans are created equal, and it's essential you have the right cookware to get an evenly baked and deliciously moist treat! That's where the Lagostina Heritage Lasagnera comes in. You're probably thinking, Abbey, why are you using a lasagna pan for baking? Here's the answer: when I went to dish up our cake fresh from the oven, it slid right out of the pan with absolutely zero sticking. If this thing were in a competition, it woulds get tens across the board!

    The lasagnera is a 14 x 8.5 inch pan made of durable 18/10 stainless steel. AND it's handcrafted in Italy, so you know its quality reigns supreme. The beautiful cherry wood lid is the cherry on top! (I couldn't resist that pun.)

    Easy Apple Spice Cake with Chocolate Chips (Dairy-Free + No Refined Sugar!)

    This easy apple spice cake with chocolate chips is a healthier alternative for a fall baked treat, with no dairy or refined sugars.

    Cook Time 30 minutes
    Total Time 40 minutes

    Ingredients

    • 2 cups applesauce
    • ½ tablespoon baking soda
    • ½ cup vegetable oil
    • 2 cups pure maple syrup
    • 2 large eggs
    • 1 cup peanut butter
    • 2 teaspoons vanilla extract
    • 4 cups flour
    • 1 teaspoon baking powder
    • 2 teaspoons cinnamon
    • 1 teaspoon cloves
    • ½ teaspoon nutmeg
    • 2 cups semi-sweet chocolate chips

    Instructions

    • Preheat oven to 350°F.
    • In the bowl of a stand mixer, dissolve baking soda into the applesauce. Add in oil, maple syrup, eggs, peanut butter, and vanilla. Blend well.
    • Add flour, baking powder, cinnamon, cloves, and nutmeg in a sifter. Slowly sift dry ingredients into the wet ingredients, mixing lightly as you go. Blend on slow until everything is barely mixed. Incorporate chocolate chips into the batter. Pour the mixture into the 14 x 8.5 pan.
    • Bake on 350°F for 30 minutes, or until golden brown. Insert a toothpick in the center to make sure it comes clean. Remove from oven and allow it to cool until it is set, but still warm. Serve and enjoy!
