After binge-watching the second season of Chef's Table on Netflix, I was determined to make a dish that contained the 4S: sweet, salty, sour, spicy. This is a process described by Gaggan Anand, for food with perfect depth and flavor. It's the perfect ratio of sugars, salt, acids and spices. Sweet: honey, mango, red peppers.
Salty: shrimp, garlic, salt, butter.
Sour: lemon, lime, cilantro.
Spicy: garlic, black pepper.

Honey Garlic Shrimp Tacos with Mango Salsa
Ingredients
- ¼ cup salted butter
- 2 garlic cloves minced
- 16 raw large shrimp
- Juice of half a lemon
- ¼ cup honey
- 1 teaspoon pepper
- 1 red pepper diced
- 1 mango diced
- ¼ cup red onion diced
- 2 tablespoons cilantro chopped
- 2 tablespoons lime juice
- 1 teaspoon salt
- 4 small flour tortillas
Instructions
- In a large skillet, heat butter and garlic over medium heat until garlic is slightly brown and aromatic. Add in the shrimp and squeeze the juice of half a lemon on top. Pour in the honey and stir everything together, cooking over medium heat until shrimp turn pink. (Remove them from the heat once they form into a "c" shape—you don't want overcooked, rubbery shrimp!) Sprinkle some pepper on top and set aside, allowing the shrimp to marinate in the honey garlic sauce.
- Combine the red pepper, mango, red onion, cilantro, lime juice, and salt in a small bowl and mix together.
- Heat your tortillas, then dish about ¼ of the fresh mango salsa into each tortilla and top with the shrimp and about 2 tablespoons of honey garlic sauce. Serve warm and enjoy!
