Lunch always seems to be the meal getting the shaft. I'm either busy with housework, or still full from a late breakfast because I'm too worried about getting everyone else fed. Before I know it, 10 o'clock rolls around and I'm all, "Hey! I should probably eat something if I want to get rid of this hanger!" Or we are out and about and grabbing something from the dollar menu. (Am I supposed to talk about things such as evil fast food joints on a food blog? Is that one of the unspoken rules I am breaking or don't know about?) When I am home, I always try to eat clean, so I thought I'd share some of my go-to quick and healthy lunch ideas!
Fig and Beet Salad. Throw together 2 cups of mixed greens with some diced red onion, one chopped beet, two sliced figs, and a handful of feta cheese.The combination of the sweet and tangy flavors are gettin' figgy wit it—Big Willie Style.
Quinoa Veggie Bowl. I always keep a batch of pre-cooked quinoa in my fridge for lunches. Veggie bowls are the quickest and tastiest way to go. For this one, mix one cup of quinoa, one cubed avocado, ½ cup of sliced tomatoes, and ¼ cup of sliced almonds. Drizzle with some balsamic vinegar and salt and pepper. I love this one from my head tomatoes.
Roasted Eggplant with Grilled Veggies. There are few more delightful things than fried eggplant. I make mine with butter, obviously. I know that isn't an immaculately healthy choice, but frying it in coconut oil is! Both equally delicious, and it gives the eggplant a soft yet crispy texture. Grill some radishes and cucumber, and throw them on top for a radishing display of food.
Caprese Salad. I know this is generally eaten as an appetizer, but it surprisingly makes a filling lunch. Slice one tomato, ½ cup of mozzarella cheese, and toss it with a couple handfuls of fresh basil leaves. I was having a Jackson Pollock moment with the balsamic vinegar and olive oil. Guess I should take my act to Art Basil this year. (This is absolutely my best pun work yet. I'm giving myself two thumbs up and a pat on the back.)
Strawberry and Cucumber Quinoa Salad. Once upon a time I threw a bunch of random stuff from my refrigerator onto a plate, and this is the magic that ensued. One cup of quinoa, 1 cup of sliced strawberries, and a few slices of cucumber topped with feta cheese and balsamic vinegar. Cuencumbered this salad is not! Be free with your salad pairings, my friends!
