Crispy Fried Onions

2 yellow onions (peeled and sliced) 2 cups canola oil (or more depending on the size of your pot)
In a large pot, add the oil about 1” deep. Turn the heat to medium-high and heat the oil until it reaches 300 degrees Fahrenheit.
Once the oil has heated, add the sliced onions. You may need to split the onions in half and do one batch at a time.
Fry the onions for about 10 minutes, until they get smaller and then begin to brown. Stir occasionally to make sure they cook evenly.
Once the onions have browned, remove them to a paper towel-lined plate to drain off any excess oil. Use in your desired recipe, and enjoy!
Vegetable oil will also work in place of canola oil
You can use any type of onion you want. I used yellow onions, but sweet onions, white onions, or red onions will also work.
Remove the onions quickly after they have turned brown. They go from brown to black very quickly.
