Carrot Raisin Salad Recipe

– 4 cups shredded carrots (about 1 lb of large carrots) – ½ cup raisins – ¼ cup golden raisins – ¾ cup mayonnaise – 1 tablespoon sugar – 1 tablespoon lemon juice

Step 1: Peel the carrots and cut the tops off of them. Shred by hand using the large setting on a cheese grater or use the shredding disk on a food processor to shred the carrots.

Step 2: In a large bowl, combine the shredded carrots and both kinds of raisins. Mix to combine.

Step 3: In a small bowl, whisk the mayonnaise, sugar, and lemon juice together until well combined.

Step 4: Pour the mayonnaise dressing over the carrots and raisins. Use a spoon to mix until fully coated.

Step 5: Serve and enjoy!
