Tomato Confit Recipe

– 1 ½ lb cherry tomatoes (you can use different colors if you want) – 3-5 garlic cloves – 6 sprigs of fresh thyme – 2 cups extra virgin olive oil – ¼ teaspoon salt – 1 teaspoon granulated sugar – 1 ½ teaspoon balsamic vinegar

Step 1: Preheat the oven to 260 degrees Fahrenheit. Step 2: Place the tomatoes, garlic, and fresh thyme in a single layer in a 9x13 glass baking dish.

Step 3: Pour in enough olive oil to cover the tomatoes about halfway. Step 4: Sprinkle the tomatoes with salt and sugar, then drizzle the balsamic vinegar over everything.

Step 5: Add the tomato dish into the oven and bake for about 1 ½ - 2 hours, until the tomatoes are wrinkled but haven’t yet burst. Step 6: Remove tomatoes from the oven and allow them to slightly cool. Serve with crusty bread, crackers, vegetables, oatmeal, etc. Enjoy!
