Fattoush Salad Recipe

- 1 head romaine lettuce - 1 large tomato - ½ English cucumber - 6 Radishes - 3 green onions - ½ cup parsley

- 2 gluten-free pitas, cut into 1” pieces - 1 cup vegetable oil for frying - ½ tsp sea salt

- 2 ½ tbsp lemon juice - 3 tbsp olive oil - 1 tsp minced garlic - ¾ tsp sumac - 2 fresh mint leaves - 1 tsp pomegranate molasses - salt & pepper

Step 1: In a frying pan or skillet, add enough oil to form about ½” covering the bottom of the skillet. Place the skillet over medium-high heat and heat the oil until it reaches 350 degrees Fahrenheit.

Pita Chips Instructions

Step 2: Add the gluten free pita bread pieces into the oil and fry for about 5 minutes until the pita is brown and crispy on both sides. You can stir the chips frequently to make sure they are evenly browned.

Step 3: Remove the fried pita chips to a paper-towel lined plate to soak up the extra grease. Sprinkle with salt and set aside.

Step 1: In a small bowl, whisk together all of the dressing ingredients until totally combined. Set aside. 

Fattoush Salad Instructions

Step 2: In the bottom of a salad bowl, add the romaine lettuce. On top of the lettuce, place the tomatoes, cucumbers, radishes, green onions, and parsley.

Step 3: Sprinkle the pita chips on top of the salad and then pour the dressing over everything. Toss the salad and serve. Enjoy!
