4cupsshredded carrots(about 1 lb of large carrots)
½cupraisins
¼cupgolden raisins
¾cupmayonnaise
1tablespoonsugar
1tablespoonlemon juice
Instructions
Peel the carrots and cut the tops off of them. Shred by hand using the large setting on a cheese grater or use the shredding disk on a food processor to shred the carrots.
In a large bowl, combine the shredded carrots and both kinds of raisins. Mix to combine.
In a small bowl, whisk the mayonnaise, sugar, and lemon juice together until well combined.
Pour the mayonnaise dressing over the carrots and raisins. Use a spoon to mix until fully coated.
Serve and enjoy!
Notes
I recommend shredding your carrots on a cheese grater rather than using already cut matchstick carrots from a bag. This is more traditional and they will soak up the dressing better this way.
Add pineapple tidbits for extra sweetness if desired.
