Carrot Raisin Salad Recipe

This tasty and beautifully colorful carrot raisin salad is perfect to make any time you're asked to bring a salad to a get-together or party and have no idea what to make! It's so easy to throw together (under 20 minutes) and can be stored in the fridge for up to 5 days - becoming more and more delicious as each day passes.

Ingredients

  • 4 cups shredded carrots (about 1 lb of large carrots)
  • ½ cup raisins
  • ¼ cup golden raisins
  • ¾ cup mayonnaise
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice

Instructions

  • Peel the carrots and cut the tops off of them. Shred by hand using the large setting on a cheese grater or use the shredding disk on a food processor to shred the carrots.
  • In a large bowl, combine the shredded carrots and both kinds of raisins. Mix to combine.
  • In a small bowl, whisk the mayonnaise, sugar, and lemon juice together until well combined.
  • Pour the mayonnaise dressing over the carrots and raisins. Use a spoon to mix until fully coated.
  • Serve and enjoy!

Notes

  • I recommend shredding your carrots on a cheese grater rather than using already cut matchstick carrots from a bag. This is more traditional and they will soak up the dressing better this way. 
  • Add pineapple tidbits for extra sweetness if desired.
