Tomato Confit Recipe

Ingredients

  • 1 ½ lb cherry tomatoes (you can use different colors if you want)
  • 3-5 garlic cloves
  • 6 sprigs fresh thyme
  • 2 cups extra virgin olive oil
  • ¼ teaspoon salt
  • 1 teaspoon granulated sugar
  • 1 ½ teaspoon balsamic vinegar

Instructions

  • Preheat the oven to 260 degrees Fahrenheit.
  • Place the tomatoes, garlic, and fresh thyme in a single layer in a 9x13 glass baking dish.
  • Pour in enough olive oil that the tomatoes are covered about halfway.
  • Sprinkle the tomatoes with salt and sugar, then drizzle the balsamic vinegar over everything.
  • Add the dish into the oven and bake for about 1 ½ - 2 hours, until the tomatoes are wrinkled but haven’t yet burst.
  • Remove from the oven and allow to cool slightly. Serve with crusty bread, crackers, vegetables, oatmeal, etc. Enjoy!

Notes

  • You can reserve the oil for use in other dishes. Make sure to use it within a week.
