Coconut Butter

Coconut butter is a great alternative to dairy or nut butter and is high in fiber and healthy fats. Add it to any recipe or top your favorite fruits and desserts with it.

Ingredients

  • 14 oz unsweetened shredded coconut
  • 1 tablespoon coconut oil (optional)

Instructions

  • Add the shredded coconut into a food processor. Add the lid and turn the processor to high.
  • Run the processor until the coconut breaks down into a powder. Continue running the processor, scraping down the sides as necessary, until the coconut forms a liquid. It will start off as gritty, but the longer you run the food processor, the smoother it will become.
  • If your coconut butter is having a hard time breaking down, you can add the 1 tablespoon of coconut oil for a bit of moisture. Only use this if necessary.
  • Store in an airtight container and use as desired. Enjoy!

Notes

  • I find that a smaller food processor works best to smooth out the coconut butter. I began my coconut butter in a large bowl of a food processor. Once the coconut had broken down quite a bit and it could fit in a smaller processor, I changed out the bowls and finished the coconut butter in the smaller food processor. 
  • Coconut butter can be tricky to smooth out, and a lot of it depends on if you have an efficient enough food processor. A blender is far more difficult to get a good final result. Depending on the strength of your food processor, this process can take anywhere from 3-20 minute. 
  • The coconut butter will be runny after its time in the food processor, but if you store it at room temperature, it will eventually harden.
