Fattoush Salad Recipe

Fattoush salad combines fresh, zesty, and beautiful with the perfect crunch. I love making this fattoush salad recipe for lunch or as a side salad for dinner. It's also nutritious, offering lots of greens and vegetables!

Ingredients

  • 2 gluten free pitas (cut into 1” pieces)
  • 1 cup vegetable oil (for frying)
  • ½ teaspoon sea salt

Salad Recipe

  • 1 head romaine lettuce (chopped)
  • 1 large tomato (chopped)
  • ½ English cucumber (chopped)
  • 6 raddishes (chopped)
  • 3 green onions (sliced)
  • ½ cup parsley (chopped)

Dressing Recipe

  • 2 ½ tablespoon lemon juice
  • 3 tablespoon olive oil
  • 1 teaspoon minced garlic
  • ¾ teaspoon sumac
  • 1 teaspoon pomegranate molasses
  • salt & pepper to taste

Instructions

  • In a frying pan or skillet, add enough oil to form about ½” covering the bottom of the skillet. Place the skillet over medium-high heat and heat the oil until it reaches 350 degrees Fahrenheit.
  • Add the gluten free pita bread pieces into the oil and fry for about 5 minutes until the pita is brown and crispy on both sides. You can stir the chips frequently to make sure they are evenly browned.
  • Remove the fried pita chips to a paper-towel-lined plate to soak up the extra grease. Sprinkle with salt and set aside.

Salad & Dressing Recipe Instructions

  • In a small bowl, whisk together all of the dressing ingredients until totally combined. Set aside.
  • In the bottom of a salad bowl, add the romaine lettuce. On top of the lettuce, place the tomatoes, cucumbers, radishes, green onions, and parsley.
  • Sprinkle the pita chips on top of the salad and then pour the dressing over everything.
  • Toss the salad and serve. Enjoy!

Notes

  • You can add red or green bell pepper if you desire 
  • If you are not going to finish the salad, only add as many pita chips as you are going to eat. Store them separately so that they are still crunchy when eating leftovers.
