Black Bean Gluten-Free Vegan Brownies

Ingredients

  • 15 oz canned black beans rinsed and drained
  • 2 tablespoons cocoa powder
  • ½ cup flaxseed meal
  • ½ cup pure maple syrup
  • ¼ cup coconut oil
  • 2 teaspoons vanilla extract
  • ½ teaspoon baking powder

Instructions

  • Preheat the oven to 350°F.
  • Combine all the ingredients, except chocolate chips, and blend them in a food processor or blender until you have smooth batter. Pour into a greased 8x8 pan, and completely cover the batter with the chocolate chips. (This part is the trick to getting them nice and chocolatey, so liberally spread the chocolate chips!)
  • Bake for 30 minutes, and enjoy with a big glass of almond milk!
