Fresh Kale Apple Salad with Wild Rice
This fresh kale apple salad with wild rice is healthy and full of antioxidants. Perfect light lunch or dinner.
Servings 2 servings
- 3-4 cups chopped kale
- 12 oz canned chicken breast
- 1 cup whole grain wild rice cooked
- 1 cup cucumbers diced
- 1 apple diced
- 2 tablespoons feta cheese
- 3 tablespoons sweet onion dressing
Chop all the produce and place in a bowl. Mix the kale, chicken breast, rice, cucumbers, apples, and feta together. Add in the dressing, and mix well.
Serve immediately with a favorite roll or bread on the side, if desired. Enjoy!
