Easy Peppermint Fudge Brownie Pie

Guess what you need to make this week? Heck yeah it’s this super easy peppermint fudge brownie pie!

Do you want to know the best part? You can make it with a freaking brownie mix! Or you can make it from scratch using this brownie recipe if you prefer to be all fancy. It won’t be quite as easy, but some people are purists about not making boxed desserts. I sit somewhere in the middle with my opinions on boxed food. And I am definitely pro brownie mix. (I’m looking at you Costco Ghiradelli pack!)

My boys loved helping whisk the fudge brownie pie together. I partnered with Pyrex, and they sent me some beautiful pieces, including a darling pie dish (it’s only $4.99!) that I use regularly now. It’s one of those heirloom pieces with tiny hearts on the bottom that I hope my boys remember fondly, especially since this was our first time making a whole pie together. (Hopefully they will pass the dish down to their own children!) I remember helping my mom in the kitchen—she had this (still does) green casserole dish with hens painted in white paint around the edges that we would put our side dishes in. I am 99% sure it was a Pyrex, too! (They’ve been around since 1915, so it makes sense… although my mom isn’t THAT old, ha.)

Now, let’s talk about the nitty gritty details of this brownie pie! It’s kind of tricky because you can either keep it a bit gooey and runny, like unto a molten lava cake (like these!). OR you go the thoroughly baked route. Both still turn out marvelous, but the bake times will be different and you might have to babysit it for the last 10 minutes.

You know your brownie pie is almost done because the top will start to crack, and that comforting aroma of brownies fills your home like a big hug!

As for the added peppermint flavor, it makes this fudge brownie pie taste like a thin mint cookie! But in a brownie pie! All the best desserts in one!

Make this easy peppermint fudge brownie pie for a festive and simple family dessert.

  • 1 1/2 cups flour
  • 1/2 tablespoon granulated sugar
  • 1 sticks salted butter, cold and cubed
  • 1/4 cup ice water
  • Brownie mix
  • 1/2 tablespoon peppermint extract
  1. Add flour, sugar, and butter to a food processor. Pulse about 15 times until the butter and shortening are pea-sized. Pour in the ice cold water and pulse until the dough just barely pulls from the sides and forms a ball.
  2. Form dough into a ball. Wrap in plastic wrap, and place in refrigerator to firm. (Be sure not to over-mix or over-handle the dough.)
  3. Preheat oven to 350°F.
  4. Remove pie dough from the refrigerator. Place on a well-floured surface and flatten into a round disc. (If needed, roll between two sheets of parchment paper to prevent sticking.) Use a rolling pin to roll the dough into a large circle that will overlap in a pie pan. Gently pick up and place the dough in the dish, using the tips of your fingers to mold it into the sides. Trim any overlapping dough so it's about 1" beyond the edge of the pan.
  5. Mix together brownie mix according to directions, and add in peppermint extract. Pour the mix into the pie shell. Bake on 350°F for 35-40 minutes until top begins to crack.
  6. Allow to cool 10-15 minutes. Add whipped cream if desired and serve.

Add foil to the pie edges if edges get too brown while baking.
