How to Make Creepy Monster Eyeball Halloween Appetizers

Seriously, you only need four simple ingredients to make these! And 10 minutes of your time (so you can spend the other two hours perfecting your gory Halloween makeup you are determined to recreate after falling down the YouTube rabbit hole.) Cross my heart, I don’t lie! I only aim to make your life easier—is it working yet?

I am a fan of monster eyeballs, because you can pretty much make them with any food you have on hand that can be molded into a round ball . . . bread, various round fruits and veggies, cookies. HOWEVER. I took it one step further and used plant-based protein balls because I’m trying to be all healthy like that these days. (Especially during Halloween when Costco-sized candy bags are calling to me. Oh, you have that problem too? #welcometotheclub)

Where do I get plant-based protein balls?

I met the owners of Bounce Protein Energy Balls at Expo West last March. Not only are they lovely people, but they make quality products too. I’ve kept a stash of their protein balls in my pantry ever since.

I knew these protein balls would make great Halloween party appetizers, paired on a bed of hummus. My personal favorite with the hummus is the Coconut Cumin. It’s savory and and full of texture. Plus each ball has 9 grams of protein and they are completely vegan and gluten-free. Basically, your friends with food allergies will love you for making these monster eyeball Halloween appetizers!

Make these creepy monster eyeball Halloween appetizers with just four simple ingredients! Perfect for a savory and healthy party appetizer.

Yield: 7-8

Ingredients

  • 2 cups hummus
  • Bounce Plant Protein Energy Balls
  • Cherry tomatoes
  • Green grapes
  • Black olives

Instructions

  1. Spread hummus on a serving platter.
  2. Unwrap as many protein balls as desired, and mold into a round ball.
  3. Slice tomatoes, grapes, and olives. Top the protein balls with your choice of tomatoes and grapes for varying eyeball colors. Top each eyeball with a black olive slice for a pupil.
  4. Arrange creepy monster eyeballs on the hummus spread.
  5. Serve immediately with chips and other veggies for dipping as well.
