Trips to the farmers' market are the highlight of summer. The rows of white tents proudly displaying their juiciest berries, fragrant citrus fruits, and ruby red cherries makes my heart sing. I can spot those wooden toothpicks a mile away, knowing they have some ripe and glistening sliced fruit waiting for me to sample. And I love the smell of dirt covering the beets and radishes. And oh, those rich greens! The crisp and hearty heads of lettuce! The bushiest bushels of basil! The electrifying color of the rainbow swiss chard stems contrasted against their dark green leaves! I could forever wax poetic about fresh farm produce.
Obviously, the best part about said produce is the incredible salads they produce. Here are a few fresh and healthy salad recipes I've found on Pinterest that I am intending to make. They are beautiful and look incredibly tasty and light, yet completely satisfying. I hope you love them too!
Grilled Kale Salad With Beets, Figs, and Ricotta. (This is the salad pictured above.) Gollygeewhiz, kids! That name alone has me all googly eyed. And I have a confession: I have never purchased figs before. I've eaten my fair share and always intend to buy them, but somehow they are always gone or the lumpy, frumpy gooey guys are the only ones left. I am crossing my fingers there will be some available next weekend.
Roasted Squash and Apple Salad With Goats' Cheese. If you are looking to make a bomb salad, just throw an apple in there. Seriously. It takes your salad next level. I feel like this is a great late summer salad, and obviously the perfect salad for fall. I am already daydreaming about apple picking this year—I am feeling a tad overly ambitious and wanting to make apple cider, applesauce, caramel apples, apple pie, apple fritters, apple cider donuts, and salads, of course. (Eeep!)
Kale, Cherry and Almond Ricotta Salad. Apparently I really like the combination of kale and ricotta with some sort of fruit. I think this means I have excellent taste in food. 😉 Also, this is a wonderful vegan salad option. And bonus! It even has edible flowers in it. Anything with edible flowers in it is a keeper.
Strawberry Caprese With Pistachio Pesto. The first time I saw this recipe my eyes bulged out of my head and I was all, "You can make caprese with STRAWBERRIES?!" Yes, I am easily impressed, so should you need a self-esteem boost, come hang out with me. 😉 But seriously. I think this salad is GENIUS. I mean, pistachio pesto? C'mon—that's brilliant! In fact, I am marching straight to my local market first thing tomorrow and fixing this baby up.
Raw Cauliflower Salad With Horseradish, Dill and Yogurt. Do you always see purple cauliflower and buy it because of its lovely lavender color, and then wonder what the crap to do with it because it is purple? It's practically a crisis, I know. But then this healthy salad recipe with the yummy mix of horseradish, dill and yogurt comes into play and the game's over. Bada bing, bada boom, poof!
